Pre-cooked mushrooms in brine
Use a double-layer pot or a stainless steel steam coil in a vat for cooking and boiling (rural mushroom houses can be pre-cooked in a large steel pot). In the pre-cooking liquid, add 5 to 7 kilograms of salt or the same amount of salt brine (the brine for immersing the mushrooms) per 100 kilograms of water and bring to a boil. Put the rinsed mushrooms into the pre-cooking tank for pre-cooking. After boiling, use a spatula to turn them up and down. Let the mushrooms mature evenly, about 6 to 7 minutes, then take them out and cool them. The pre-boiled salt water can be cooked 5 to 6 times, but after taking out the mushrooms for the third time, add 3% salt (or brine) to increase the saltiness. Do not use pre-boiled salt water too many times, otherwise it will affect the color. The pre-cooking time depends on whether the mushroom core is cooked, and the large and small mushrooms should be pre-cooked separately.
