How to keep mushrooms fresh?


Sodium metabisulfite treatment: First rinse the mushrooms with 0.01% sodium metabisulfite aqueous solution for 3-5 minutes, then soak in 0.1% sodium metabisulfite aqueous solution for half an hour, drain immediately, and store in plastic bags. However, when the storage temperature exceeds 30°C, it can only stay fresh for 1 day and will gradually change color later.Kinetin preservation: Soak fresh mushrooms in 0.01% 6-aminopurine solution for 10-45 minutes, remove and drain, and store them. This can delay aging and keep them fresh.The chemical name of Bijiu, a plant growth retardant, is succinic acid-2,2-2 methyl hydrazide. Soak the mushrooms in 0.001%-0.1% Bijiu water solution for 10 minutes, drain, and store in plastic bags. They can be stored for 8 days at room temperature of 5°C-22°C, and can prevent browning, delay aging, and keep freshness.
